Sweet Potato and Spinach Frittata

 Prep Time: 10 minutes | Cooking time: 20 minutes | Servings 4

Ingredients: 

  • 2 sweet potatoes, peeled and sliced
  • 2 Cups fresh spinach
  • 8 eggs
  • 1 Cup feta cheese

Salt and pepper to taste 

Directions:

In a blender, combine almond butter, bananas, eggs, and baking powder.

Heat a non-stick skillet and pour small portions of the batter to make pancakes.

Cook until bubbles form on top, then flip and cook the other side.
